Monday recipe-blogging: Vegan brunch

Yesterday, I tested whether it is possible to feed brunch to five people without their realizing that it is vegan. Surprisingly, the answer is yes.

First course: Mushroom crostini

1 8 ounce container button mushrooms
1 8 ounce container oyster mushrooms
1 8 ounce container baby bella mushrooms
1 8 ounce container shitake mushrooms
Dried porcini
Marsala
Olive oil
Garlic
Loaf of french bread (or any bread that doesn't have milk or eggs in it)

Put four or five dried porcini mushrooms in a small dish and cover with 1/2 marsala, 1/2 water or vegetable stock. Soak for at least 1/2 hour; can be done overnight.

Preheat the oven to 500 degrees. Slice the bread into 1 or 1 1/2 inch rounds (depending on how bready you want it) and arange the slices on a cookie sheet. Toast in the oven until golden brown.

Slice the mushrooms and fry in olive oil until golden brown. (I used two pans). Add 2-4 cloves of crushed garlic and saute for thirty seconds. Add the marsala/porcini mixture. Cook until the wine is reduced to a thick glaze on the mushrooms. Spoon over the toast rounds.

Second course: Chocolate pancakes with berry sauce

Pancakes:

(adapted from Vegan with a Vengeance)

1 cup plus 2 tablespoons flour
3 tablespoons cocoa powder
2 teaspoons baking powder
1/2 teaspoons salt
1/3 cup water
3/4 cup rice or almond milk
2 tablespoons safflower oil
3 tablespoons maple syrup
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional)
1/3 cup chocolate chips

In a large bowl, sift together flour, cocoa powder, baking powder, and salt. Create a well in the center of the dry ingredients and add water, milk, oil, maple syrup, and extracts. Mix until just combined. Stir in chocolate chips.

Cook over medium-high heat, or if using an electric griddle (which I highly recommend) set it to 350 degrees. Cook until bubbles form in the middle, then flip and cook for two more minutes. Serve with

berry sauce:

1 bag frozen raspberries or mixed berries
1/2 cup sugar
1/4 cup water

Combine water and sugar in saucepan and bring to a boil. Add berries; return to boil over high heat. Turn down heat to medium and cook until liquid has reduced to a just very slightly syrupy consistency, about twenty minutes.

Serve these along with almond milk for the coffee, and people will not even realize it's vegan.

There are a variety of great vegan pancake mixes -- I don't even bother with a recipe like this.

Add in Gimme Lean sausage patties. Even my anti-vegan father loves those. He buys Gimme Lean instead of pig sausage on his own.

Choosing meat.

Grumpy -- Gimme Lean is very high in protein. But people in the US tend to get a lot more protein than they need.

Definitely needs tofu to balance out the missing protein. For example, sliced tofu could be fried in the garlic/olive oil mixture and then laid over each toast piece before the marinara is finished and ladeled out. IMO it would be a good compliment to the meal's tastes and textures, too.

How do you reconcile your proclaimed veganism with the undeniable fact that so many human-raised crops are pollinated by CAPTIVE honeybees, living their lives in bondage so that we humans may more easily sustain ourselves?

And, have you given up leather, and other animal byproducts such as the mold-release and other lubricants that are essential to almost all industrial activity?

A truly vegan lifestyle would be substantially impossible nowadays, and it's really just a small step from wondering about the gelatin in your Altoids to sitting down for a delicious slice of rib roast. We'll be waiting for you.

Megan, thank you for posting about going vegan! I'm glad I'm not the only vegan who isn't a total tatooed-liberal-socialist-atheist type. I hope you stick with it.

Your premise that you invited five people over for brunch and none of them expected vegan food to be served seems fishy to me, unless you pulled five total strangers off the street. Or maybe none of the friends who came over ever bothers to read your blog where you've been posting about your veganism incessantly for the past few months.

I also take issue with your menu. I don't think these two dishes should be served together. Garlic and chocolate don't mix. Both dishes are full of starch and have no protein. You need to balance your menu better.

Why no salt and pepper in the mushrooms? Are you going low-sodium, too? What's with the chocolate chips? My eight-year-old niece orders chocolate chip pancakes at IHOP, but I don't think they're really for adults if you think about it.

Uh, "L", it's not a myth, nor does it become more of one by saying so. Moreover, the idea that non-Vegan Western diets tend to contain protein in excess of basic dietary need is not a point many people are taking up in dispute, so the resource you cited is not scoring any points by making that observation, either.

Now: Notice a consistent theme in the propopsed menus they list? Nuts, soy product, non-soy bean product, more nuts, more soy, more nuts, more non-soy bean product...

There's a reason why a resurgence in veganism has resulted in a new ocurrences of protein-deficit related diseases that are otherwise nonexistent in western nations: A vegan diet really does cut you off from a wide range of protein sources, and as such, it requires extremely strict attention to regular consumption of a limited range of alternate sources.

Thank you Megan. I'll definitely try out these dishes. They sound really delicious. The right balance of healthy and decadent.

I know everyone's entitled to their opinions, etc, but some of the criticisms here I find a little odd ...

* Chocolate pancakes are only for kids? Um, since when??? (I'm 42, I guess I should only eat serious food.)

* You shouldn't have a garlicky first course and a chocolaty desert?? That's a new one on me!

And that stuff about the protein is just silly ... I'm always surprised that people aren't aware there's protein in pretty much every food you eat, including fruits, veggies, grains, even potatoes. Even if you're a strict veg it's almost impossible not to get enough protein ... unless you're eating only junk food. (I'm pretty sure the ADA will back me up on this).

If you don't get a complete metabolic set, it won't do you much good. Rice, for example, has quite a bit of protein (and smells every bit like it when it rots) but it is not considered a complete dietary source.

I'm always surprised that people who speak about needing a complete metabolic set of proteins don't realise that the various amino acids don't have to be consumed in the same mouthful, but are easily obtained in a well balanced vegan diet, which probably involves more than just breakfast.

In any case 5 medium mushrooms (84g) have 2g protein - about 10g in this recipe - 30% of the US RDA for a 6" male. They are also cholesterol, fat and sodium free, as well as being low in calories and an excellent source of riboflavin and a good source of niacin, copper and pantothenate - a combination of benefits rare in animal products.

btw it is ironic to criticise a recipe based on mushrooms by spurious reference to pollination by bees, when mushrooms are not a flowering plant (but thanks anyway all you bees out there).

i am a vegan for 5 years & am healthy xcept for weakness in my arms and legs. it hursts when i walk and i talk very slowly. tonite for dinner i had a chocolate chip vegan pancake but am still very hungry and weak.

I have a bunch of great vegan recipes: vegan beef jerky, vegan rabbit jerky, vegan bison jerky, vegan duck jerky, vegan squirrel jerky, vegan pork jerky, vegan turkey jerky, vegan veal jerky, and vegan vegan jerky with vegan chocolate chips. Vegan vegan vegan until Easter when we can eat meat again.

You know, as much as I love vegan food and am sure that the entire breakfast (including the maple syrup, which often can have shrimp in it) was truly vegan and has plenty of protein available for a morning meal. Though, after listening to the other commenter's against vegan banqueting. I agree with them. It probably is wrong. Chances are there were fairies living under those mushrooms and they are now all homeless. I feel so guilty I will never eat veggies again. Thanks for opening my eyes to the horrors of whimsical and superfluous healthy eating 'O Wise Ones'.

But I definitely do recommend eating vegan - have to keep the population of hippies down somehow! They can be very tasty barbecued, though be careful as some can have insanely high THC levels. Free range Berkleyites and Park Slopers tend to be superior, though you can do well with an UWS specimen. Remember that most of the weight is gristle and bone, so you likely will need to eat more than you expect.

It is a recipe folks, and one that looks pretty tasty at that.

You are starting to make vegan activists and their approach to other peoples diets look completely laid back.

Megan McArdle is not stopping anybody from eating what they want. Why don't the people who don't want to eat her stuff just go post on a BBQ board and stop acting as though there is a war. Vegans are just looking for good recipes and enjoying the camaraderie. I don't care what people eat but I feel anybody that continually attacks me is a nuisance bordering on psycho. Sure, it is a free comment area. I would enjoy if the haters would go away.

The meals really sound tasty and I get a kick that they have really appetizing ingredients that spark my creativity. I ate enough meat to fill a football field and just got tired of it. It is fun to play with food and enjoy the company of like people. The first time I say the meal has no meat they surround and attack. Get lost.

I'll be more than glad when we are separated so I can live in peace. It's a lot like the blacks who attack me to show me how it feels. I never attacked anybody so I get real tired of trying to be polite perhaps making friends with people that are different. I don't need the trouble. And I don't hunt down people to attack.
